Au Gratin Spaghetti Squash

Ingredients:

1 spaghetti squash, halved and seeded

1/4 tsp onion powder

1 teaspoon red pepper flakes

1/4 teaspoon garlic powder

salt and freshly ground black pepper to taste

3/4 cup fat-free sour cream

2 cup shredded cheese (I used cheddar)


Directions:

Cook Spaghetti Squash. Cut the squash in half, scoop out the seeds. Rub oil on the squash and season (I use salt and pepper). Flip over on a parchment paper lined baking sheet (rind up) and cook for about 45 min at 375.


Let spaghetti squash cool. Scrape the inside of the squash into a mixing bowl. When you scape the inside of the squash it resembles little noodles.


Mix spaghetti squash, seasons, sour cream, and 1/2 of the Cheddar cheese together. Transfer to the prepared baking dish and top with remaining Cheddar cheese.


Bake in the preheated oven for 20 to 25 minutes.

When it’s done mix well and serve! 👩🏼‍🍳💋
