Buffalo Chicken Stuffed Peppers

Ingredients

4 peppers sliced in half length wise (I used 6 because they were small)

2 cups of cooked shredded chicken ( I cooked boneless skinless chicken breast in the crockpot on high for 4 hours)

8oz cream cheese softened

1/2 cup of shredded cheddar

1/4 cup shredded mozzarella cheese

1/3 cup Frank's hot sauce

1 tbsp ranch seasoning mix

Ranch or blue cheese to drizzle over the top for serving.


Directions

💥Preheat oven 350 degrees

💥Place peppers in 9x13 baking dish

💥In a mixing bowl add chicken, cream cheese, 1/4 cups of cheddar, mozzarella, hot sauce, and ranch seasoning mix. Mix Well!

💥Stuff Peppers with chicken mixture

💥Add tbsp of water to the bottom of the baking dish & cover with foil.

💥Bake for 25 minutes or until peppers have softened to your liking

💥Remove foil sprinkle remaining cheese and put back in over to melt cheese

💥Drizzle with Ranch or Blue cheese and ENJOY!
