đȘThe BEST Keto chocolate chip cookies EVER!!!đȘ
Ingredients:
1 cup superfine blanched almond flour
1/4 cup + 2 tbsp coconut flour
1/4 tsp xanthan gum
1 3/4 tsp baking powder
1/4 tsp salt
1/4 cup + 2 tbsp unsalted butter, softened
1/2 cup swerve
1 1/2 tsp vanilla extract
2 eggs
1/4-1/2 cup sugar free chocolate-chips (I use Lily)
Instructions:
Pre-heat your oven to 350*F.
1. In a large bowl, combine your flours, xanthan gum, baking powder and salt.
2. Add in your butter, sweeteners, vanilla extract and mix.
3. Add your eggs and mix again until combined and a dough forms.
4. Fold in your chocolate-chips.
5. Line a baking sheet with parchment paper.
6. Begin rolling your dough into balls and space them evenly apart on the baking sheet (makes 15)
7. Flatten each one slightly with the back of a spoon and place in the oven.
8. Bake for 10-12 min or until the cookies are JUST set and the bottoms lightly browned. (They will continue baking on the cookie sheet afterwards. You can cook longer if you donât like the slightly under-cooked middleâŠ(thatâs my favourite part, and it made them chewy and soft).
9. Let the cookies cool (if you leave on cookie sheet they will still cook). You can leave on baking sheet or remove to cooler surface.
10. Serve immediately or store in an airtight container!
