1 pound hamburger meat 1 egg 1 cup pork rind crumbs (we used hot and spicy) Diced onion (add to your liking) Salt and pepper to taste 4 slices sliced cheese (used pepperjack) 1 cup shredded cheese (used pepperjack)
Preheat oven to 350 Combine all ingredients except cheese Combine well Split mixture into 2 parts Put one part in baking dish and press until even Add the 4 pieces of the sliced cheese and about half of the shredded cheese Top with 2nd half of meat mixture Top with remaining cheese and sugar free ketchup if you like Bake for 40-50 min depending on thickness of meat
